Visited the Bottarga "King" - Trikalinos Co.

A few days ago, I had the pleasure of spending time with a wonderful group at the facilities of Trikalinos Co., where we were initiated into the secrets of one of Greece’s most unique products: Bottarga (avgotaraho)!

We learned about its rich history, how it’s produced, and what makes Greek bottarga so distinctive and delicious. Of course, we tasted it in various pairings—but we couldn’t resist drizzling it with Pamako Premium Organic Extra Virgin Olive Oil to discover just how perfectly the two complement each other.

And most importantly, we had the honor of learning valuable lessons in business excellence from Mr. Zafeiris Trikalinos, the visionary who brought Greek bottarga to the world stage and into the finest restaurants across the globe.
